Kitchen exhaust cleaning in Wollongong, fully documented
From Wollongong CBD and Fairy Meadow through Shellharbour, Dapto, Warrawong, Corrimal and Port Kembla, we help Wollongong’s clubs, pubs, RSLs, QSR sites and aged-care kitchens stay compliant with AS 1851-2012. We’ve been helping NSW kitchens stay compliant since 2003, and Wollongong is part of our regular service area.
That means trained, NADCA/ASCS-certified technicians on your site, working to one documented standard whether you run a single kitchen or multiple sites. Every clean leaves you with a consistent, date-stamped evidence record for every site, not just the flagship: a detailed report, generally with 30 or more before-and-after photos, you can hand an insurer, auditor or landlord, proving the ductwork and fan were cleaned, not just the canopy.

The records behind an Illawarra AFSS
In New South Wales, AS 1851-2012 is the reference point for how commercial kitchen exhaust systems are inspected, cleaned and documented. Based on our reading, the NSW fire-safety reforms tightened this further. The practical upshot is the same as it’s always been: demonstrate a documented cleaning and inspection regime, with records kept on site, and that maintenance is what backs the Annual Fire Safety Statement (AFSS) the building owner lodges each year. SAIS does the AS 1851-2012 maintenance and supplies the records the fire-safety practitioner relies on to endorse the AFSS. SAIS does not sign it.
Two misreadings come up a lot: that monthly cleaning is required regardless of cooking type, and that monthly inspections must be done by an external “competent person” that store staff can’t be. In our reading, neither is quite right, so we’d always suggest confirming your specific obligations.

Every Wollongong clean includes
- Before & after photo evidence (generally 30+ per job), ready for an AFSS, insurer or audit request
- A certificate of works completed to AS 1851-2012
- A detailed report, kept on site for your records
- A recommended cleaning frequency set to each site’s cooking load
In our reading of AS 1851, the monthly visual inspection can generally be carried out by a trained store staff member working to a documented checklist, rather than requiring an external licensed inspector. We can help you set that up, while we keep the cleaning side documented to standard. We’d always suggest confirming your specific obligations with your fire-safety practitioner.
FAQ
Wollongong exhaust cleaning: common questions
Is Wollongong part of your regular NSW runs?
Yes. Wollongong is part of our regular service area, covered by trained, accredited crews working to the same standard and documentation as our city work.
How far along the Illawarra does your coverage run?
We cover Wollongong, the Illawarra and surrounds, including Wollongong CBD, Fairy Meadow, Shellharbour, Dapto, Warrawong, Corrimal, Thirroul, Port Kembla, Kiama, Albion Park and Unanderra. If you’re not sure we reach your site, give us a call.
How frequently should a commercial kitchen in the Illawarra be cleaned?
It depends on cooking type and volume. High-output kitchens often need monthly cleaning, lighter operations quarterly. We assess each site and recommend a schedule with the documented cleaning records that support your AS 1851-2012 obligations.
What happens between professional cleans, and who inspects?
In our reading of AS 1851, the monthly visual inspection can generally be carried out by a trained staff member working to a documented checklist, rather than requiring an external licensed inspector. We can help you set up that process. We’d always suggest confirming your specific obligations with your fire-safety practitioner. More here.
What paperwork comes with a Wollongong clean?
Every clean comes with a detailed report, generally 30 or more before/after photos plus a certificate of works completed to AS 1851-2012. These are the maintenance records your fire-safety practitioner relies on to endorse the Annual Fire Safety Statement (AFSS). SAIS does the cleaning and documents it; SAIS does not sign the statement.
Do you clean the whole exhaust system or just the canopy?
The whole system, not just the visible canopy. A standard kitchen exhaust clean covers the canopy interior and exterior, filters, the full duct run and the exhaust fan, degreased to bare metal where accessible, so the system is maintained to AS 1851-2012. The ductwork and fan are where grease quietly builds up, and they are the parts a quick surface wipe never reaches.
Can cleans run overnight at Wollongong venues?
Yes. Most Wollongong cleans run in overnight or early-morning windows, timed around your trading hours so the kitchen is ready for the next service. After-hours, weekend and public-holiday work is available, and any loading for it is priced into the quote from the start rather than appearing on the invoice later.
Can one agreement cover several venues across the Illawarra?
Yes. Every quote is scoped to the site, with volume-based pricing for groups running multiple venues. A single agreement can take in all your kitchens across Wollongong and the Illawarra, with each site cleaned to the same documented standard and the records consolidated in one place. Travel and after-hours work are priced in when we scope the job. Call 1800 800 235 for a no-obligation assessment.
