What NSW compliance looks like on the Central Coast

In New South Wales, AS 1851-2012 is the reference point for how commercial kitchen exhaust systems are inspected, cleaned and documented. Based on our reading, the NSW fire-safety reforms tightened this further. The practical upshot is the same as it’s always been: demonstrate a documented cleaning and inspection regime, with records kept on site, and that maintenance is what backs the Annual Fire Safety Statement (AFSS) the building owner lodges each year. SAIS does the AS 1851-2012 maintenance and supplies the records the fire-safety practitioner relies on to endorse the AFSS. SAIS does not sign it.

Two misreadings come up a lot: that monthly cleaning is required regardless of cooking type, and that monthly inspections must be done by an external “competent person” that store staff can’t be. In our reading, neither is quite right, so we’d always suggest confirming your specific obligations.
